Thrifty holiday favorite - Praline Pecan Crunch
I love the holidays. It is the only time I splurge for calories and fix my favorite recipe, preline pecan crunch. I thought I would share it with you so that you can enjoy a few pounds with me. It is super easy and not too expensive if you plan right. Each item goes on sale periodically. I buy when it does and then save or freeze the ingredients to keep them fresh.
8 cups Quaker Oat Squares or Cinnamon Oat Squares
2 cups chopped pecans
1/2 cup light Karo syrup
1/2 cup firmly packed brown sugar
1/4 cup butter
1/2 tsp baking soda
1 tsp vanilla extract
Preheat oven to 250 degrees.
Mix cereal and pecans in a 13×9 baking dish.
Combine syrup, sugar, and butter in a 2 cup microwavable bowl. Bring to a boil in the microwave (appx 1.5 min) Stir until mixed. Place back in microwave until boiling.
Add baking soda and vanilla. Stir until frothy.
Pour over cereal/pecan mix and bake for 1 hour. Stir every 20 min.
Cool on wax paper and then break into pieces.

The pronunciation depends on where you grew up. I tease people all the time that they are called pi-`khan. But technically I am big enought to admit that it can be said either way. It’s a joke with me.
