How To Make Chicken Soup
I was checking out a blog today for the first time. Adornments by Lynn is of course, written by Lynn. She is an avid jewelry designer, traveler, reality show addict and cat lover. Today on her blog I found a recipe for homemade chicken soup. It is getting colder outside now (well, except for our heat wave this week ;)). Chicken soup feeds a lot of people, is great for when you’re sick, and is a thrifty meal to make. It’s also great for freezing and using later. This soup recipe calls for a crock pot. Time saver - even better! I plan to save this recipe for future use. I’d like to try it and see how it tastes. Until then, I’m passing it on to you. Hope you enjoy it. If you happen to try the recipe before me, let me know how it turned out.
In a crock pot, combine:
One whole head of celery, chopped
One large onion, chopped
One clove of garlic, chopped
One drained can of navy beans
Two large aseptic containers of organic chicken broth
Three large chicken breasts, no skin, bones or fat – chop into 1 inch cubesThen I throw in these spices, to taste:
Thyme
Oregano
Basil
Salt
Seasoned pepper
One bay leafCover it and let it cook on low for about 6-8 hours. Then add cooked brown rice (about three cups, after cooking). Let simmer another hour and it’s ready to serve.

I love crock pot recipes. They are usually cheaper and great on time.

I know. I just wish my husband liked crock pot recipes. :( Every now and then I throw one in the menu though. He gets over it.
